800g Field & Flower lamb mince
1 white onion, finely chopped/minced
5 garlic cloves, crushed
100g pistachios, chopped
100g dried cherries, chopped
1tsp sweet paprika
½tsp ground allspice
½tsp ground cinnamon
1 bunch of fresh mint, finely chopped
1 bunch of fresh parsley, finely chopped
Olive oil, for frying
- In a bowl, mix all the ingredients together (minus the olive oil), making sure that the spices are well incorporated.
- Shape the mixture into small eggs and press each one with a fork to slightly flatten.
- Heat a skillet or non stick frying pan and fry each kofte until they brown and cooked through. They could also be cooked in the oven.
- Serve with flatbreads, tzaziki or a yogurt and feta dip and lots of salad.
